Typology: red wine;
Bottles Produced: 50.000;
Production Area: Donnici, a small town in the South of Cosenza, in Calabria region;
Production per Hectare: intentionally reduced to 80 tons per/H;
Grape Variety: native grapes, Nerello also known as Calabrese and Greco Black;
Training System: traditionally alberello;
Harvesting Period: from the end of September to middle October; Vinification System: soft pressing and long maceration with the skins; Alcoholic Fermentation: in steel at controlled temperature;
Refining Methods: in steel for six months, then in Rovere (durmast) barriques for around six months, then six months in bottle;
Organoleptic Features
Colour: deep red of great intensity, ruby reflection tending to garnet with
the necessary refining in bottle;
Scent: intense and persistent scent of red berries fruit, wide and complex bouquet, spicy smell of liquorice and cacao given by the refining passage in barrique;
Taste: moderately tannic in youth, it becomes soft and velvety with time, elegant and fine, it is a wine of great personality;
Gastronomic Coupling: we recommend pairing with regional dishes like fusilli with meat sauce and nduja from Spilinga, with ricotta cheese produced in Sila;
Serving Temperature: 18-20°C., after oxygenation;
Alcohol: 13,5 % vol.
