Production Area: Donnici is a small village in the south of the town of Cosenza, in Calabria region; it is a hilly area between the Crati and Savuto rivers. Fiego is a restricted area, particularly suitable for the production of grapes from which this wine is produced;
Altitude of Vineyard: 400 - 500 mt. above sea level;
Grape Variety: Magliocco, Greco N. and Malvasia;
Method of Cultivation: traditionally alberello;
Harvesting Period: from the end of September to middle October; Vinification System: soft pressing and long maceration with the skins; Alcoholic Fermentation: in steel at controlled temperature;
Refining Methods: judicious aging in oak barriques of second passage for about six months, then six months in bottle;
Organoleptic Features Colour: intense ruby red, tending to garnet;
Scent:intenseandpersistentwildberrybouquet withdelicatespicynotes given by the refining passage in barrique;
Taste: it is a full wine of great personality, soft and elegant, rightly tannic with an excellent tasting persistence;
Gastronomic Coupling: excellent with the typical regional dishes like the pasta in lamb sauce, the spicy sausage and the smoked caciocavallo cheese (strong cheese typical of Southern Italy) of the Sila area;
Serving Temperature: 18-20 °C., it’s appreciated the oxygenation;
